You can probably get away with using an iPhone in terms of privacy.
That is if you avoid using iCloud (tied to real personas), using VPNs, and being dilligent about using WIFI/BT/NFC.
Also avoiding Google in general, and keeping your phone highly focused. Double benefit is that you adopt a minimalist lifestyle where you aren't distracted by dopamine farms.
Before I switched to /e/ I used my iPhone for 3 things: Signal, Wallet, and Uber+Eats.
(Yes, Uber uses Google Maps, consider finding a different service)
No Mail, No Safari, no SMS.

Yesterday I switched from using gmail as my primary emails for accounts.
Also enabled 2FA OTP (bc SMS 2FA is crap) whenever possible.
Feels good to slowly detach from google. I just realized just how much data was leakwd thru emails alone.
For.example my trading app always report filled orders by email. Amazon purchases, money transfers, etc.
I've deGoogled, and removed Apple services from my life and yet I get gifted an Apple Watch.
There may be some uses though. For one, its pretty af. And it can serve as a decent fitness tool to measure heart rate, movement etc.
The cons, you need an Apple device to set it up. So I've had to boot up my old iPhones to set it up.
I did so without an associated iCloud (at least not tied to my real persona).
Now I use it exclusively to measure to my heart rate during walks and before sleeping. Always on airplane mode!

Dear web developers and admins,
please stop embedding Google's hideous #ReCaptcha into your websites. Its algorithm is faulty, forcing regular users to click dozens or even hundreds of fire hydrants, bicycles, or traffic lights each day. It puts a 'suspicious activity' flag on users who won't obey to Google's business model - such as people who don't sign into Chrome, use anonymity VPNs, or use browser extensions to suppress common tracking mechanisms. Enough is enough. Stop it.
